
Ingredients
- Angelic Bakehouse Kale + Spinach Wraps
- 1 yellow onion - chopped
- 1 tbs coconut oil
- Minced garlic
- 3 red potatoes - chopped
- 1/2 cup red lentils
- 1 tsp salt
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tbsp tomato paste
- 1 small head cauliflower - chopped
- 3 cups water
- 1/3 cup coconut milk - full fat
- 1 cup green beans - chopped
- Red pepper flakes
- 1/4 tsp ground clove
Instructions
- Heat oil in pot over medium heat. When oil is hot, add onions and stir until they are soft
- Add the garlic and stir constantly for another 2 minutes
- Mix in salt, curry, clove, tomato paste, red lentils, potatoes, culiflower, and water. Bring to a boil and reduce heat to low. Cover and let simmer for about 20 minutes or until potatoes are tender
- Add the green beans, red pepper flakes, and coconut milk. Cook for another 4-5 minutes, uncovered, until the mixture thickens up
- Season to your liking with spices. Add aloo gobi to each wrap and serve!
