Aloo Gobi Wrap

To celebrate Meatless Monday, we created this delicious Indian inspired Aloo Gobi Wrap. The delicious curry sauce, hearty veggies, and warm spices pair so well with our sprouted grain Kale + Spinach Wraps.

Ingredients

  • Angelic Bakehouse Kale + Spinach Wraps
  • 1 yellow onion - chopped
  • 1 tbs coconut oil
  • Minced garlic
  • 3 red potatoes - chopped
  • 1/2 cup red lentils
  • 1 tsp salt
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tbsp tomato paste
  • 1 small head cauliflower - chopped
  • 3 cups water
  • 1/3 cup coconut milk - full fat
  • 1 cup green beans - chopped
  • Red pepper flakes
  • 1/4 tsp ground clove

Instructions

  1. Heat oil in pot over medium heat. When oil is hot, add onions and stir until they are soft
  2. Add the garlic and stir constantly for another 2 minutes
  3. Mix in salt, curry, clove, tomato paste, red lentils, potatoes, culiflower, and water. Bring to a boil and reduce heat to low. Cover and let simmer for about 20 minutes or until potatoes are tender
  4. Add the green beans, red pepper flakes, and coconut milk. Cook for another 4-5 minutes, uncovered, until the mixture thickens up
  5. Season to your liking with spices. Add aloo gobi to each wrap and serve!
