California Veggie Sandwich

Never. Enough. Veggies! Stack your sandwich sky high with crunchy cucumbers, heirloom tomatoes, lettuce and of course, avocado on Angelic Bakehouse Whole Grain Bread. It will have you saying "#LunchGoals"!

Ingredients

  • Angelic Bakehouse 7-Grain Bread
  • 1/2 C Vegan Mayo
  • 1 Tsp Minced Garlic
  • 2 Tsp Dijon Mustard
  • Salt & Pepper
  • 1 Avocado
  • 2 Tsp Olive Oil
  • Red Pepper Flakes
  • Sliced Heirloom Tomatoes
  • Cucumber Slices
  • Spinach
  • Romaine Lettuce
  • Bean Sprouts
  • Sweet Peppers
  • Shredded Carrots

Instructions

  1. To make the mayo spread; mix mayo, dijon, and garlic in a small bowl. Add salt and pepper to taste
  2. To make the avocado spread; mash avocado and mix in oil, red pepper flakes, and salt and pepper to taste in a small bowl
  3. Spread the mayo on one slice of bread, and the avocado on the other
  4. Starting with the romaine, add veggies to the bread in layers
  5. Finish topping, close the sandwich, and enjoy!
