Chicken Pesto Avocado Panini

Looking for something to make with your leftover chicken? You've come to the right place! A yummy chicken pesto panini will never disappoint.

Ingredients

  • Angelic Bakehouse 7-Grain Bread
  • 1 Clove Garlic
  • 1.5 Tbsp Pine Nuts
  • 1 C Basil
  • 1/4 C Parmesan
  • 1/4 C Oil
  • 1 C Chicken
  • 1-2 Tomatoes
  • 1-2 Avocados
  • Sliced Mozzarella

Instructions

  1. To make the pesto: add garlic, basil, and pine nuts to a food processor. Blend to combine. Add parmesan and blend once more. Slowly add oil between blending until smooth
  2. Shred chicken
  3. Slice tomatoes and avocados
  4. Spread pesto on 6 slices of 7-grain bread
  5. Top with sliced mozzarella, tomatoes, chicken, and avocado on 3 slices. Place other pieces of bread on top
  6. Grill in a panini press until cheese is melted
  7. Enjoy!
