Curried Chicken Salad Wrap

Ingredients

  • Angelic Bakehouse Sprouted Wraps
  • 3 chicken breasts, bone in & skin on
  • Olive oil
  • Salt
  • Pepper
  • 1 1/2 c mayo
  • 1/3 c dry white wine
  • 1/4 c chutney
  • 3 tbsp curry powder
  • 1 c diced celery
  • 1/4 c chopped scallions
  • 1/4 c raisins
  • 1 c roasted & salted cashews

Instructions

  1. Preheat oven to 350 F
  2. Place chicken on baking sheet and rub skin with olive oil. Season liberally with salt & pepper
  3. Roast for 35-40 minutes. Set aside until cool enough to handle, remove bones and skin and dice chicken into bite size pieces
  4. In a food processor, combing mayo, wine, chutney and 1 1/2 tsp salt. Process until smooth
  5. Coat chicken with dressing. Add celery, scallions, and raisins. Mix well. Top with cashews
  6. Place about 1/4 c of salad in each wrap and enjoy!
