
Ingredients
- Angelic Bakehouse Sprouted Wraps
- 3 chicken breasts, bone in & skin on
- Olive oil
- Salt
- Pepper
- 1 1/2 c mayo
- 1/3 c dry white wine
- 1/4 c chutney
- 3 tbsp curry powder
- 1 c diced celery
- 1/4 c chopped scallions
- 1/4 c raisins
- 1 c roasted & salted cashews
Instructions
- Preheat oven to 350 F
- Place chicken on baking sheet and rub skin with olive oil. Season liberally with salt & pepper
- Roast for 35-40 minutes. Set aside until cool enough to handle, remove bones and skin and dice chicken into bite size pieces
- In a food processor, combing mayo, wine, chutney and 1 1/2 tsp salt. Process until smooth
- Coat chicken with dressing. Add celery, scallions, and raisins. Mix well. Top with cashews
- Place about 1/4 c of salad in each wrap and enjoy!
