
Ingredients
- Thin & Crispy Pizza Crust
- 3/4 cup of your favorite jarred salsa
- 15 oz can of black or pinto beans, drained and rinsed
- 1 cup frozen corn
- 2 large Roma tomatoes, chopped
- 1/4 cup red onion, chopped
- 1 large Hass avocado
- 5 big leaves of romaine lettuce, chopped
Instructions
- Preheat oven to 450° F
- Drain and rinse your beans. Set aside to drain off excess water
- Chop your Roma tomatoes, red onion, avocado, and romaine lettuce
- Lay out the Thin & Crispy Pizza Crust on a clean work surface
- With a spoon, spread the 3/4 cup of jarred salsa on the crust, leaving a 1/2 inch on the perimeter for the crust
- Put the frozen corn, Roma tomatoes, red onion, and the drained and rinsed canned beans of choice on the crust
- Place the loaded Thin & Crispy crust on the oven rack
- Let the crust cook for about 10 minutes, or until the edges are a light golden brown
- Remove from the oven and let cool
- Place the avocado and chopped romaine lettuce on pizza
- Slice into pieces and serve!
