
Ingredients
- Angelic Bakehouse Slider Buns
- 1 red onion, sliced into small pieces
- 1 red bell pepper – sliced
- 1 orange bell pepper – sliced
- 1 yellow bell pepper – sliced
- 5 tbsp olive oil
- Balsamic glaze
- 2 tsp brown sugar
- Salt and pepper to taste
- 1 tsp paprika
- Portobello mushrooms – caps and stems removed
- 2 avocados – sliced
- Basil for topping
- Goat cheese at room temperature
- 2 tbsp olive oil
- Minced garlic
- 1 tbsp chopped basil
- 1 tbsp fresh cilantro
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Preheat the grill to high setting
- Take aluminum foil (or grill pan) – use one sheet for peppers and onions and the other for mushrooms
- Drizzle 2 tbsp of olive oil over each aluminum foil packet
- Drizzle 1 tbsp vinegar over each
- Cover veggies with salt, pepper, brown sugar, and paprika
- Add minced garlic to mushrooms
- Fold sides of aluminum foil over veggies so they can be transported to grill
- Place each packet on the grill and grill until the veggies start to char and caramelize – toss occasionally
- Remove them from grill once ready – season mushrooms with salt and pepper
- Build sliders by spreading goat cheese spread on buns, topped with a mix of the veggies, sliced avocado, and balsamic glaze.
