Veggie Grilled Sliders

Grilled veggies and goat cheese!? Yes, please! Oh and it’s 2020, so there is also avocado.

Ingredients

  • Angelic Bakehouse Slider Buns
  • 1 red onion, sliced into small pieces
  • 1 red bell pepper – sliced
  • 1 orange bell pepper – sliced
  • 1 yellow bell pepper – sliced
  • 5 tbsp olive oil
  • Balsamic glaze
  • 2 tsp brown sugar
  • Salt and pepper to taste
  • 1 tsp paprika
  • Portobello mushrooms – caps and stems removed
  • 2 avocados – sliced
  • Basil for topping
  • Goat cheese at room temperature
  • 2 tbsp olive oil
  • Minced garlic
  • 1 tbsp chopped basil
  • 1 tbsp fresh cilantro
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to high setting
  2. Take aluminum foil (or grill pan) – use one sheet for peppers and onions and the other for mushrooms
  3. Drizzle 2 tbsp of olive oil over each aluminum foil packet
  4. Drizzle 1 tbsp vinegar over each
  5. Cover veggies with salt, pepper, brown sugar, and paprika
  6. Add minced garlic to mushrooms
  7. Fold sides of aluminum foil over veggies so they can be transported to grill
  8. Place each packet on the grill and grill until the veggies start to char and caramelize – toss occasionally
  9. Remove them from grill once ready – season mushrooms with salt and pepper
  10. Build sliders by spreading goat cheese spread on buns, topped with a mix of the veggies, sliced avocado, and balsamic glaze.
