Chickpea Vegan Tacos

Tacos aren’t just for Tuesday’s! Our vegan friends are going to love these yummy chickpea tacos – filled with zucchini, vegan cheese, and cilantro on top!


  • Angelic Bakehouse Beet Wraps
  • Chickpeas
  • Zucchini
  • Sliced radishes
  • Cilantro
  • Vegan cotija
  • Vegan Greek yogurt
  • Lime juice
  • Chili powder
  • Cumin
  • Salt
  • Garlic powder
  • Onion powder
  • Paprika


  1. Mix together: chili powder, cumin, salt, garlic powder, onion powder, paprika
  2. Coat chickpeas and zucchini slides in spice mixture
  3. Add chickpeas and zucchini to pan and cook on stove until veggies are a light golden brown – about 10 minutes. Set aside when complete
  4. Slice radishes into thin slices
  5. Combine zucchini, chickpeas, and radishes and put on the beet wraps
  6. Top with lime juice, cilantro, vegan cotija, and vegan Greek yogurt
